Thanksgiving is right around the corner folks! It’s also a good time to be thinking about ways to use up a fridge full of excess food that you will inevitably have after that big family dinner. Instead of just reheating the leftovers, why not be creative and turn it into a whole new meal? Here are 5 recipes that I’ve rounded up from the web for that scrumptious post-holiday feast.
1. Turkey Cranberry and Grilled Brie Cheese Sandwich
You can’t go wrong on this one. These bad boys come together in a jiffy and make a light meal while you recover from the previous day’s food coma.

2. Turkey Curry
For this recipe, you could even use leftover turkey on the second day, when the meat is running a bit dry. This simple curry packed full of flavor is a perfect makeover recipe.

3. Bubble and Squeak
A traditional English dish, Bubble and Squeak is the name for fried leftover vegetables from a Sunday roast. If you find it hard to turn the whole veggie cake over, you could try shaping the mix into individual patties before frying.

4. Cranberry- Turkey Enchiladas
This recipe is a sure winner with kids.

5. Cajun Turkey Guinness Pot Pie
This is one of my tried and tested favorite that is a big hit with family and friends. If you find making the pie crust too tedious you could always opt for store-bought pastry or you could skip it altogether and serve it as a stew with bread.

Happy Thanksgiving and Bon Appétit!
